Makes: 2 x 30 cm pizzas
Prep time: 15 minutes
Cooking time: 45 minutes
Ingredients
1 large cauliflower, cut into pieces
½ tsp salt
55 g low-fat cream cheese
15 g finely grated Parmesan (or another vegetarian hard cheese)
1 large egg
1 tsp TABASCO® Habanero Sauce
Preparation
Preheat the oven to 200 °C / gas mark 6. Line a baking sheet with non-stick baking paper.
Steam the cauliflower until soft and tender, then let it cool.
Purée the cauliflower in a food processor, or mash it with a spoon until it looks like mashed potato.
Put the cauliflower purée on a clean tea towel. Wrap it up and squeeze firmly to press out all the excess moisture.
In a bowl, mix the cauliflower, cream cheese, Parmesan, egg and 1 tsp TABASCO® Habanero Sauce into a mixture that looks like mashed potato.
Spoon the mixture into the middle of the lined baking sheet. Press the dough out into a circle about 6 mm thick.
Bake in the preheated oven for about 40 minutes, until golden brown and firm. Let it cool and turn the base over before adding your pizza toppings.
