Green Shakshuka with TABASCO® Green Sauce

Green shakshuka is the same idea as the red version, with the tomato base swapped for tomatillos, spinach and a lot of herbs. It comes out lighter and sharper, which makes it better suited to brunch than the heavy red one.

The heat comes from TABASCO® Green Sauce, which is mild enough that you can put a decent amount in the sauce itself rather than treating it as a condiment. One pan, about 30 minutes.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 400 g tomatillos, chopped (or 3 green tomatoes plus a squeeze of lime)
  • 100 g baby spinach
  • small bunch cilantro, chopped, plus extra to serve
  • small bunch flat-leaf parsley, chopped
  • 1-2 tbsp TABASCO® Green Sauce, plus more to serve
  • 4 eggs
  • salt and black pepper
  • crumbled feta and warm bread, to serve

Preparation

  1. Heat the olive oil in a large skillet over medium heat. Cook the onion and green pepper for 6 to 8 minutes, until soft.
  2. Add the garlic and cumin and cook for 1 minute, until you can smell it.
  3. Stir in the tomatillos and 100 ml water and simmer for 8 to 10 minutes, until it thickens into a sauce. Add the spinach and herbs and cook until wilted. Stir in the TABASCO® Green Sauce, then season.
  4. Make 4 wells in the sauce and crack an egg into each. Cover the pan and cook for 5 to 7 minutes, until the whites have set but the yolks are still soft.
  5. Scatter over the feta and extra cilantro, add a few more drops of TABASCO® Green Sauce, and serve from the pan with warm bread.

Notes

Tomatillos are the awkward ingredient outside a specialist shop. Green tomatoes with a squeeze of lime get you close enough that nobody will ask.

If you are cooking for people with different heat tolerances, leave the Green Sauce out of the pan and put the bottle on the table instead. It is one of the milder sauces we sell, and you can see where it sits against the rest if you want to compare.
